Trader Joe’s Trick #1: Chicken Gorgonzola, Brown Rice & Arugula Salad

Final MealI adore Trader Joe’s Chicken Gorgonzola. This scrumptious little dinner ensemble (and variations of it) is an absolute favorite over here at the Mack casa. The chicken comes prepped and ready to cook, this microwaveable rice is my savior—and chances are excellent you will find yourself making this amazing arugula salad over and over again.

Obviously the salad is more of an adult delicacy, but the chicken and rice are super kid-friendly and also make for great leftovers! Plus, it’s all very pretty, and who doesn’t love pretty dinners?

What You’ll Need:

  • Trader Joe’s Chicken Gorgonzola (refrigerated section; one package serves two adults)
  • Trader Joe’s Organic Brown Rice (frozen section, three bags sold in one box; one bag serves two)
  • Trader Joe’s Organic Arugula
  • Trader Joe’s Organic Dried Cranberries
  • Trader Joe’s Raw Pignolias (Pine Nuts)
  • Trader Joe’s Freshly Shaved Parmesan, Romano & Asiago Cheese
  • Juice of 2 lemons
  • 1/8 Cup Trader Joe’s Extra Virgin California Estate Olive Oil (They have many options, but this is my fave)

INgredients

What You’ll Do:

  1. Cook chicken breasts according to package instructions; I prefer oven to microwave.
  2. Cook rice according to package instructions; microwave for three minutes. I know, SO HARD.
  3. Throw arugula in a bowl and top with cranberries, pine nuts and shaved cheese in amounts according to your liking. Note: These salad items aren’t cheap, but they are seriously delicious. They can also easily stretch to make this salad two or three times.
  4. Combine lemon juice and olive oil. Whisk together. You just made salad dressing from scratch! POINTS, YOU! Pour on the salad and toss thoroughly! Note: You can play with the lemon juice to EVOO ratio based on your preference.
  5. Serve up & enjoy!
